I'm Teresa, the recipe creator, writer, and photographer behind A Plantiful Path recipe blog. I've been vegan for over a decade, and I love creating healthier versions of my favorite foods.
I want to make oil free vegan eating accessible to as many people as possible. These recipes are some of my most popular comfort food recipes that can be made quickly by anyone, and will be loved by vegans and non-vegans alike!

I’ve been following Teresa Sklenicka for quite some time on her A Plantiful Path Facebook page and website and was thrilled to see that she had published an oil-free vegan cookbook! Eating vegan has never been a challenge for me, but eating healthy oil-free vegan meals that actually taste good and don’t require tons of weird ingredients and hours in the kitchen are!
Teresa’s Quick and Easy Cookbook delivers what she promises: FIFTY(!) oil- free vegan recipes- including breakfast, lunch, and dinner, AND dessert- that you can make in less than 45 minutes and don’t require a bunch of weird ingredients.
The recipes are easy to understand and follow and the FOOD has been delicious so far! I’ve had a chance to sample a portion of these tasty healthy recipes and am eager to work my way through the list until I’ve tried all of the recipes!
I highly recommend this vegan cookbook to anyone who has an interest in yummy healthy plant-based food.

This Plantiful Path cookbook does prove to be a guide of quick and easy recipes as it says on the cover. The introduction of what to prepare before you start cooking turns out really helpful. As soon as you get those special ingredients, you're pretty much equipped with everything you need for the recipes. The recipes are so easy to follow and quick to make. But the best thing is they offer delicious flavor. I have only tried some recipes so far but I definitely look forward to trying out some more. Our favorites so far are the cashew mayonnaise, blueberry pancakes, and Fettuccine alfredo.
